WHere is a simplified interpretation of a drink featured on our latest menu. This is a large-volume premix that is loaded with the flavours of the festive period, making it ideal for hosting a holiday party. Any leftover cordial for brunch beverages, puddings, or to make more rounds of the drink.

The Bikini Cocktail

Makes enough for 10 servings

To make the Clementine Cordial (yields 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar

Ingredients for the Cocktail (yields 850ml, serving 10)

400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine cordial (from the recipe above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing

Directions

For the Citrus Syrup: Combine the listed items into a pan, bring to a simmer, mixing so the sugar melts. Then, remove from the stove and leave to cool down completely. Transfer to a clean bottle, cap it and store in the fridge, it will last for up to one month.

For the Cocktail Base: Pour all the liquid ingredients in a large bottle, allow it to infuse for one hour, then strain best through a fine cloth, so it's completely strained.

To serve: Add 85ml of the batch mix into your stirring glass filled with ice, gently stirring carefully for one minute until cold. Strain into a chilled martini glass or a similar vessel, decorate with some cranberries and finish by giving it a brief mist of the essential oil above the glass.
